Cherry Cobbler Filling

1In a large mixing bowl combine the cherries, first amount of sugar, cornstarch, and lemon zest. Toss well. Set aside while creating the topping. NOTE:
It is important to do this step first and let it sit while creating the topping so that pectin has a chance to start developing.

Air Fryer Cherry Cobbler Topping

1In your food processor, add the flour, cornmeal, second amount of sugar, baking powder, salt, and baking soda. Blend for a minute until well-combined.
NOTE: If you do not have a food processor, put these ingredients in a large mixing bowl and combine well.
2Add the butter cubes. Using the Chop settings, blend for a minute until the mixture becomes the consistency of small peas. If your food processor doesn't
have a Chop setting, pulse until the right consistency. NOTE: If you do not have a food processor, use a pastry cutter to cut in the butter until the desired
consistency.
3Add both quantities of buttermilk. Using the Dough setting, mix for two minutes, until thoroughly combined. If your food processor doesn't have a Dough
setting, pulse until thoroughly combined. NOTE: If you do not have a food processor, use your hands to combine the dough.
4Flour the cutting board with cornmeal. Put the dough on the cutting board. Using your hands or a French rolling pin, roll the dough until it is 2.5 -
3 cms thick (1 - 1.5 inches).
5Using a cookie cutter, knife, or the opening of a jar, cut the dough into circles, squares, or any desired shape.

2When the "Add Food" food indicator goes off, add 1 springform pan to the bottom rack.
3When done, remove the cherry cobbler and repeat with the other cobbler.
4Let the cherry cobblers sit at room temperature for at least one hour before serving to allow the cherries to set.
