medium rare is how I liked mine cooked. A little pink in the middle.
As far as the cuts, I don't really have a favorite. Filet Mignon, tenderloin, t-bone, porterhouse, rib-eye, sirloin... it's all good. Depends on the way its seasoned and who's making it.
