I've been playing around with a number of choc-chip cookie recipes; adding, subtracting ingredients & amounts. I've finally landed (I think) on our "just right" for us cookie recipe.
...
We have replaced choc chips at our house with Nestle semi-sweet chunks; way better than 'the usual' choc chips. The only place that I've found these here lately is Walmart.
...
**edited to add another NOTE:
I use Diamond Crystal kosher salt which is supposedly, ounce-for-ounce, less salty due to shape of the product. Most table salt is granulated, D.C. is flaked. SO, if you are using Morton or other usual brands of table salt in this recipe, use only half as much.
............................
Preheat oven to 350°
3 C flour
1 C old-fashioned oats + 1 C o.f.Oats-blended (in blender)
1 t. soda
½ t. baking powder
1 T. salt
2½ sticks butter (melted & cooled)
½ C packed brown sugar
½ C granulated sugar
2 T. light Karo
1 T. vanilla
2 T. milk
2 or 3 eggs
1½ C choc chunks
1 C coarsly chopped walnuts or pecans
...
Mix dry ingredients & set aside
Cream & mix butter, sugars, Karo, vanilla, milk & eggs
Mix in dry ingredients
Stir in choc chunks & nuts
I use a large (Oxo ?) cookie scoop to drop onto cookie sheets and bake at 350º for about 12-15 minutes.
