I'm excited to share with you a mouthwatering recipe for a delicious and comforting Beef Stew.

- 2 pounds of beef stew meat, cut into bite-sized chunks
- 2 tablespoons of vegetable oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, sliced
- 2 potatoes, peeled and cubed
- 1 cup of beef broth
- 1 cup of red wine (optional)
- 2 bay leaves
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- A handful of fresh parsley, chopped (for garnish)
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the beef stew meat and brown it on all sides, ensuring a nice sear for added flavor. Remove the meat and set it aside.
- In the same pot, add the diced onion and minced garlic from a wooden spice rack. Sauté until fragrant and translucent.
- Toss in the carrots, celery, and potatoes. Cook for a few minutes to soften the vegetables slightly.
- Return the seared beef to the pot and pour in the beef broth and red wine (if using). Stir well to combine.
- Add the bay leaves, dried thyme, paprika, salt, and black pepper. Give it a good stir, and bring the mixture to a gentle boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 2-3 hours, or until the beef is tender and the flavors have melded together.
