- 600 g strained yogurt (5% fat)
- 300 g heavy cream (35%)
- 120 g icing sugar
- 70 g lemon juice
- Zest of 2 lemons
- Finely chopped pistachios
- Lemon zest
- Mint leaves
- In a mixing bowl, combine the yogurt, icing sugar, heavy cream, lemon juice, and lemon zest.
- Using a whisk attachment, beat the mixture at high speed for 1-2 minutes until thick and fluffy.
- Divide the mousse into 6 serving glasses or bowls and refrigerate for about 1 hour.
- Garnish with chopped pistachios, extra lemon zest, and mint leaves before serving.
