Letting it sit

Have you ever noticed when you cook some things, it tastes better if you let it sit for a while?

I made this mexican casserole thingy earlier today and I had a piece when it was fresh out of the oven, it was just okay. I just had a piece now and it seemed a lot tastier.
 
Same holds true for when I make Lasagna. I let it rest 30 minutes before cutting it.
 
Don't really tend to let things sit myself, although I do find that things like Lasagna are a lot nicer after they have been heated up in the microwave. Anyone got any theories as to why it makes it nicer?
