Octopus Stew

Okay, I've considered it, and even if it's not something everyone might try, that's perfectly fine.

I've always been drawn to unique recipes, although this one is not unique to me.
Anyway, I picked a beginner friendly recipe, easy and with straightforward ingredients. I don't want to scare anyone away.

Ingredients:
- 1 octopus (approximately 3 kilograms)
- 250g white wine
- 250g chopped tomatoes
- 125g olive oil
- 6 to 8 Allspice
- 1 onion (studded with 4 cloves)
- 4 cloves of garlic
- 1 carrot
- 1 small green pepper
- 1 stick of celery
- 1 stick of thyme
- 2 bay leaves
Instructions:
- Begin by cleaning the octopus, removing the eyes and mouth, and washing it thoroughly.
- Place the octopus in a lidded pot, adding all the ingredients except for the tomatoes and olive oil.
- Slowly cook the octopus, allowing it to simmer in its own juices until tender.
- Once cooked, carefully remove the octopus from the pot and cut it into bite-sized pieces.
- In a separate pot, combine the chopped tomatoes and olive oil, cooking for 10 to 15 minutes.
- Add the octopus back into the pot, allowing the flavours to meld for an additional 5 to 7 minutes.
