Pan Fried Leeks with Pork

Here’s another recipe that I absolutely love, so I thought I’d share it here with you all. No need for any more chit chat....just straight to the recipe!


Ingredients
  • 500 g pork for frying
  • 1 onion, finely chopped
  • 1 tbsp sweet paprika
  • 1 large leek, sliced
  • 1 Pork sausage
  • ½ cup olive oil
  • ½ cup white wine
  • ½ tsp chili flakes (or to taste)
  • A few strands of saffron (6-7 stamens or to taste)
  • Salt, freshly ground pepper
  • A bit of cheese in cubes ( kefalotyri or Pecorino Romano )
  • A bit of chopped parsley
Cooking Instructions:
  1. Wash the pork, season it with salt, pepper, and a bit of olive oil, and set it aside. Slice the sausage and set it aside as well.
  2. Chop the onion and leek. Heat a pan over medium heat, add olive oil, and sauté the onion and leek.
  3. Once the vegetables soften slightly, add the pork and sausage to the pan and sauté them.
  4. After they’ve browned, deglaze with white wine.
  5. Once the alcohol evaporates, add the paprika, salt, and chili flakes. Prepare 2 cups of lukewarm water (not hot) and dissolve the saffron in it for 10-15 minutes. This step is essential to release the full aroma and beneficial properties of the saffron.
  6. Add the saffron-infused water to the pan and lower the heat. Let the dish cook for about 30 minutes.
  7. Just before turning off the heat, add the cheese cubes. Once the pork is cooked, remove from heat and serve while hot.
  8. Finally, sprinkle chopped parsley on top.
Note: I didn’t specify the type of sausage needed, as you probably won’t find the exact one as the recipe suggests. You can use any pork sausage that contains ingredients like garlic, fennel seeds, oregano, thyme, coriander seeds, black pepper, salt, orange peel, cloves, cinnamon, or wine. While you may not get all of these flavours in one sausage, something like Italian sausage should provide at least some of these key ingredients. You can probably use that.
