I think it depends on the people you're writing to. If you're writing in academia, then it's almost a given that you have to be politically correct in your writing. Only because you're made more aware of it. In almost every essay I've written in college I've had to keep my language in mind. Otherwise I would be using words like "chairman" to mean "chairperson" and "mailman" to mean "postal carrier" and not given it a second thought.

Yes, in certain situations. If you're presenting a research article or communicating in the workplace for example then it is very important to be politically correct.

I think they do. There's other things in life that people should be devoting their energy and thoughts too. In my opinion, people are easily insulted these days and frankly some of it is stupid. One example I heard off was Gingerbread men being renamed to Gingerbread Person. Why? Who was it going to offend?

It's stupid, but I understand when it's used in Academia and maybe politics. However, in everyday life, if someone gets insulted because I said nitty gritty (which Police are could face disciplinary action if they use this - http://news.bbc.co.uk/1/hi/talking_point/1988952.stm - ) because it dates from the slavery area. Grow up, grow a pair, and tackle the real problems of the world.
 
Some people care a great deal... and everyone else suffers the consequences.
