I'll be having something like this tonight for dinner. I've decided to go American for tonight. My caretaker last Saturday has gone to Costco and has bought a huge pack of homemade fries with skin still on, and a few condiments and sauces for the ribs tonight. I'll be having good old BBQ ribs and fries and a cold beer to wash it down.

Baby spare ribs or tender ribs?
Any kind of ribs, as long as they are not too tough or chewy.
