My family doesn't eat pork for religious reasons, so we usually just stick with turkey for Thanksgiving.
 
If it comes out dry you're cooking it too hot, for too long, and slicing it too soon.



The oven should be no more than 325. You need to put a 'tent' of foil over the breast for the first half of the cooking time.



And once it reaches temp (160), turn the fire off and let it set for at least twenty minutes.



Oh, and do yourself a BIG favor. Pull that damned useless turkey popper thing out of the bird and throw it away and use a meat thermometer.







Then it won't be dry.
