Not saying it back. I've accidently done this to my girlfriend when I was in a hurry on my way out. She didn't like it very much.

I would have to say the not saying it back or "I like you as a friend". It's hard opening yourself up to another, it's very hard when you thought they felt the same way but was wrong. It can be embarrassing.

Simply laughing would be the worst response IMO or just "I Know" would be bad.
