My personal most favourite ones are : spicy cheddar, Swiss, aged Gouda, Brie and Havarti. I love mine in : BLTs, grilled-cheeses, other sandwiches, cheese, fruits and wine, cheese and crackers and finally : on a cheese platter with different veggies and cold cuts. And you personally? Havarti!, pepper-jack, Irish cheddar & Oaxaca cheese (White, semihard cheese that originated in Mexico. It is similar to unaged Monterey Jack, but with a texture similar to mozzarella or string cheese.) This one melts very nicely, also 'fun' cold....it pulls apart like string cheese but has more flavor.
What do you do with that?
Goes great on sandwiches, you can make Muenster bread, quiches, in mac and cheese, on sliders. It really works well on a lot of things because it's just a soft, nice cheese.
