Just had some yesterday; first of the season & it's SO tasty. Best, easiest, quickest way I've come across to cook it is in the shuck in the microwave.

 
Our work actually brought in some corn so we could make elote. It was FUCKING delicious.
I've never tried that; looks/sounds great.
Also never tried this suggested Cojita cheese; any comparative clues so far as taste/texture?

I want to say it's kind of similar to like...Parmesan? But the taste it a bit sharper. It's more moist, and is a bit thicker.

I think I've seen it in Costco & been curious...so now I think I'm gonna have to be adventurous & try some. :D

I did buy a block of that at Costco; ..ya gotta buy the whole cow. :LOL: BUT, I like Costco cheeses. (y)
I like it, so much like Parm & a nice substitute but maybe a bit saltier. Good texture, grates very easily.

KFC used to have AWESOME corn on the cob back in the day but it has changed.. the corn they use seems to taste more like fresh corn (compared to frozen) and it is sweeter.. but the way they prepare it is different..

Luckily for me, I figured out exactly how they made their original corn and so it is easy for me to recreate it..

I love corn on the cob! There's a farm down the road that grows sweet corn. It's so sweet and tender when raw that you don't even have to cook it. I kid you not. So delicious!

I have never cooked it in the shuck.. my grandmother taught me how to shuck corn so that wasnt an option for me lol.. but I have seen the videos on Pinterest and Insta of people doing that in the microwave and it is impressive.. but what I found was that KFC boiled the ears in salt water and then butter it when it is cooked..

I'm not sure if this is the case with all KFCs though but I know the ones by me did.. the only reason I figured this out was because when I was cooking dinner one day, I left a big pot of water on the stove to boil the ears in and my husband saw the pot of water and threw some salt into it thinking that I was making pasta..

While eating dinner I took a bite of the corn and noticed that it tasted different and exactly like the corn from KFC that I had growing up.. and so, I asked my husband if he put anything in the water and he said he put some salt in it because he thought I was making pasta and apologized and I told him not to, because he helped me figure out why KFC corn was so good.. and since then that is how we make our corn.. and other veggies..
 
My parents cook their corn in the microwave, and it is quick and easy. However, it is freaking amazing when grilled on the barbecue! OMG, sooooo good!

Anyhow, the first post on this page has a short video of 'how to' cook it in the microwave in the shuck. Somehow that shuck imparts a very good extra flavor to the corn & you don't have to mess with that big pot of water. :cool: So easy!
 
I know exactly what you mean.. the flavor is better.. and I am eager to try it on the grill as well.. I also want to try Mexican Street corn..

I am sure there is an official name for it, but that was what it was called when the Mexican vendor was selling it at Smorgasburg in Brooklyn a few years ago.. my sister-in-law went nuts over it when she had it, so I am curious about it.. I didn't get one at the time because there was a long line and I was already waiting in another long line for something else..
