Well, there’s only one way to deal with the sudden arrival of summer and that’s to try out this maple bacon weave ice cream sandwich.

It’s bridging the gap perfectly between comfy winter food and dreamy summer treats.

The bacon weave ice cream sandwich is the invention of Nick Chapman from DudeFoods, known for such seminal foodie creations as the bacon weave choco taco and the poutine Benedict.

For those who aren’t familiar with the bacon weave (where on earth have you been?), you just cut rashers of bacon into halves and weave them together until you have a blanket of bacon *drools*. Then, simply put in a pan and fry until crispy.

One you have your salty weave, cut out generous circles. Then eat the leftover bacon. This is possibly the best bit.

This is where Nick’s recipe gets a little unorthodox. To create the perfect circles of ice cream, he grabbed a cordless saw and a pint of ice cream from the freezer and sliced out a one-inch thick circle of vanilla ice cream.

Or, you know, you could just spoon a load of ice cream onto one of the bacon buns and then sandwich the other one on top, which is probably safer on your fingers.

I like bacon and I like ice cream. I don't, however, think I could eat them together.
