Applesauce Cake
From: Peak Market (Winnipeg, Manitoba, Canada -8/4/2015)

Ingredients Cake:
2 cups (500 ml) sugar
1/2 cup (125 ml) shortening
1 1/2 cups (375 ml) applesauce
1 1/2 cups (375 ml) celery, chopped
1 cup (250 ml) cold water
3 1/2 cups (875 ml) all purpose flour
2 teaspoons (10 ml) baking soda
1 teaspoon (5 ml) baking powder
1/2 teaspoon (2 ml) nutmeg
2 teaspoons (10 ml) cinnamon
1 teaspoon (5 ml) cloves
1/2 cup (125 ml) walnuts
1 cup (250 ml) raisins

Ingredients Quick Maple Icing:
3 tablespoons (45 ml) margarine
2 cups (500 ml) powdered icing sugar
1 teaspoon (5 ml) maple flavouring
3 tablespoons (45 ml) milk

Directions:
1. In a large bowl, cream together the sugar & shortening. Add the applesauce, celery & water.
2. Sift together the flour, baking soda, baking powder, nutmeg, cinnamon & cloves. Then, fold the dry ingredients into the batter. Fold in the walnuts & raisins.
3. Pour the batter into a lightly greased 9 x 13 inch (3 L) baking pan. Bake in a preheated 350ºF (180ºC) oven for 30 to 45 minutes or until a toothpick inserted in the center comes out clean.
4. Cool the cake on a rack. Frost with the Quick Maple Icing.
5. Making the Quick Maple Icing: In a medium bow, mix together the margarine & powdered icing sugar. Add the maple flavouring & milk. Beat until the frosting is uniformly smooth & creamy; adding more milk, if necessary, but only a little at a time.
