Are you a fan of Mexican Food?

Mexican food is something I don't make too often but when I do, it is loved in my house and my eldest absolutely loves it. He would eat Mexican food daily if he could but I don't allow that as he would soon tire of it.

When it comes to Mexican food I like to eat things like fajitas and burritos as long as they are not too spicy. I prefer to have them mild and be able to enjoy the flavor.

Are you a fan of Mexican food? What is your favorite?

Enchiladas are really good. We had them today as my eldest asked if I would do them today as we hadn't had them in over a week. Will admit, I really enjoyed them with it being over a week since we last had them.
