A few years back, I found a super easy recipe that I loved. I used to make it every week, but then I kind of forgot about it.
Recently, I remembered and thought, why not share it?
It's not fancy, but it's quick and tasty. Maybe there are better recipes out there, but if you want something simple, give it a shot! 🍴

Ingredients:
  • 10 chicken wings, thighs, or drumsticks
  • 1 tbsp tomato paste
  • 3 tbsp curry powder
  • 1 red pepper, sliced
  • 3 tbsp oil
  • 3 ginger roots, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, sliced
  • 1 tbsp salt
  • 1 tsp black pepper
  • 2 cans of coconut milk
  • 3 chillies, finely chopped

Instructions:

  1. Heat a frying pan or wok and add the oil.
  2. Once the oil is hot, stir-fry the onion, garlic, and ginger until fragrant.
  3. Add the chicken, curry powder, tomato paste, and the remaining ingredients.
  4. Let it simmer for a delightful 30 to 40 minutes.
