There are so many types of mushrooms and lots of flavours to choose from when cooking. I was wondering, do you like mushrooms? If you do, what are your favourites and what dishes do you enjoy them in the most?

I know some can be costly, so even if we cannot get them often, we still have our preferences. I like a lot of them, especially Enoki, Nameko, and Shiitake. I actually thought of this topic because I got some wood ear mushrooms to cook this time. It is a lot for one meal, so I will make a few different dishes. I'll probably make a salad, a soup, and maybe use a little as a topping for rice.
 
I like cooking with mushrooms and trying new things.
For instance, I'll sometimes chop up mushrooms and mix them with mashed-up pinto beans whenever I'm making pinto bean patties (I'll also add some spices and bread crumbs to bind it together). 👨‍🍳
 
I love sautéing "common" mushrooms in butter, salting a little & eating them just like that; or adding them to most anything. I am only familiar with the mass-produced, commonly available mushrooms....mainly white (baby button), cremini, & portobello. All the same species just at different stages of growth.
I have a 'kid' who is a mushroom scavenger & she has occasionally brought me batches of wild chanterelles....awesomely delicious! I've bought chanterelles when they've been available in the store; and, sadly, the flavor could not compare with the wild ones.
I really know nothing about all of the different varieties. :cautious:
