This. I do this every time with salmon fillets. Also fun are light salmon tacos with dill, lemon and a mango salsa.

I like to bake the salmon just with salt and pepper, and then take a jar of tomatillo salsa and add fresh avocado and cilantro to it, and cover the cooked salmon in that. Also good with rice. Takes like zero effort and is super tasty
