I like soup.
Soup is inexpensive and easy to make. It’s a big pot meal that can stretch, so I don’t have to think about cooking for a few days. It's usually better the second day. It also freezes well, so I can freeze the leftovers when I get tired of eating the same thing over and over.
I often have two or three varieties of soup in my freezer to choose from when I’m too lazy or don’t have time to cook.
