Letting it sit

Have you ever noticed when you cook some things, it tastes better if you let it sit for a while?

I made this mexican casserole thingy earlier today and I had a piece when it was fresh out of the oven, it was just okay. I just had a piece now and it seemed a lot tastier.

Letting a roast or casserole sit after cooking, the cook's term is letting it Rest, allows the item to reabsord some of it's juices and the flavors to blend inside.



And it can make a BIG difference in the final product.

Same holds true for when I make Lasagna. I let it rest 30 minutes before cutting it.

Don't really tend to let things sit myself, although I do find that things like Lasagna are a lot nicer after they have been heated up in the microwave. Anyone got any theories as to why it makes it nicer?
