A friend - You can take turns driving and it's also a great opportunity to spend time talking and catching up with each other.
Camera - Seems pointless to go on a road trip to various new places and not bring a camera.
Cooler with drinks and food
Emergency Toolkit & Basic First Aide kit
Maps of the areas you'll be driving through, just in case you need to take a detour to avoid traffic.
Toiletries such as tissues, paper towels, cleaning wipes, hand sanitizer and a roll of toilet paper, in case the rest stop isn't well-stocked. Or in case you need to pull over before finding a rest stop.
An iPod playlist or CD collection works wonders in making the trip more enjoyable, especially if you're traveling through an area where radio signals might be sketchy.
