What's your favorite soup?
 
Vegetable and butternut squash are my favourites. I like to have them on a cold winter day, like what I did in November :)

I should say that I prefer my soup thick, not thin and runny. Oh, and I like to have slices of bread with it too so that I can dunk it in and take a bite :)

I tried cream of mushroom soup for the first time. It was so gross, I wound up throwing it out! :green:

Some times I wing it if I dont have all the ingredients but usually I cook it like this:

First I cook up some chicken (a couple large breasts or so), I usually put salt and pepper or lemon pepper on the chicken before putting it in the oven. After its done, I shred it up.

Combine all this in a large pot:
- shredded chicken
- 1 large jar of Pace Picante / chunky salsa (hot or mild)
- 1 small can of tomato paste
- 1 can of corn (drained)
- 2 chicken bouillon cubes
- a couple table spoons of lemon and lime juice
- half a cup to a cup of white rice
- chopped green onions
- cilantro
- fill the rest of the pot up with water

Let all that boil for a while then put corn tortilla chips in a bowl, pour the soup over and top with a dollop of sour cream and some grated pepper jack cheese.

Sounds good. I'll have to try it at some point.

I enjoy soups of the usual "Cream of" variety; most often ones like Brocolli or Potato. I'm working out a recipe that allows for pretty much a great, simple, entirely from scratch cream style soup. Right now all I've got is a ingredients list and the process, no exact measurements though.

For those who do not like Cream of Mushroom soup; don't go only on the experience of stuff from the can. Making it from scratch is so much better. :)
