Your favourite Spices?

Sweet or Genovese Basil · Rosemary · Thyme · Sage · If you consider garlic as a spice, it moves to the top of the list.
 
It depends on the meat or any food in fact. For chicken, it would be nutmeg and rosemary.

For beef, it really depends on the recipe, but I'll go with black pepper as a base and Mediterranean/middle eastern vibes with warm spices and herbs.

For fish, briny flavour like mustard, or capers, even pickles.

I guess I can't really pick a favourite.
