Stuffed Squid

Ingredients:

  • 4 large squid
  • 1/4 cup extra virgin olive oil
  • 1 finely cut red dried onion
  • 2 spring onions, finely cut
  • 1/2 cup Arborio Rice (substitute for the original rice)
  • 2 tablespoons Zante currants
  • 1/3 cup dry white wine
  • 2 tablespoons finely chopped dill
  • 1 cup grated tomatoes
  • Olive oil, salt, ground pepper
Instructions:

  1. Chop the squid tentacles finely. In a pan, warm the olive oil, then add the dried onion and spring onions. Stir for a minute and add the chopped tentacles. Stir for about 5 minutes.
  2. Add Arborio rice, currants, and white wine. Wait 2 minutes until the alcohol evaporates. Add 1 1/2 cups of water, season with salt and pepper, and sprinkle with chopped dill.
  3. Wait until the liquids reduce by half.
  4. Spoon the cooled rice mix into the squid tubes, securing the open end with cocktail sticks. Arrange the stuffed squids in a small ovenproof pan.
  5. Drizzle olive oil and grated tomatoes over the squid.
  6. Bake at 180°C for 15 minutes covered, then another 15 minutes uncovered.

I remember from another post you are not a big fan of seafood . And you are right sonone will enjoy it, just not many for sure. :p
I wanted to add recipes not many people will make all the time. :)
 
I wished I could like it. My wife loves seafood. It kind of sucks that I can't enjoy it with her. :(

Yes, it is nice to be able to eat the same food together with your partner

When I look at the recipes or foods people like it just seems so complicated to me.
What makes it complicated ?

It's a classic in some cultures, and as I mentioned, there are many ways to prepare it.
 
So many ingredients to make something to eat. I grew up on welfare so my mom made simple things. She could bake up a storm and I learned to bake from her.
 
Hmm, I like seafood but I would have to approach this dish cautiously. :P
 
I was considering adding another seafood dish after the new year, but I think I've already scared everyone. :triniti:
Maybe I should stick to dishes that don't require eye and mouth cleaning, like octopus in wine, a dish I was thinking to add after the new year.:coffee:
