Stuffed Zucchinis

Stuffed Zucchinis

Ingredients:

  • 12 zucchinis
  • 1 garlic clove
  • 2 teaspoons of breadcrumbs
  • 250g Ricotta cheese (substitute for Anthotiro, as it may be challenging to find)
  • 250g feta cheese
  • 2 teaspoons parsley
  • 2 teaspoons mint
  • 1/2 cup olive oil
  • Pepper to taste
Instructions:
  1. Wash the zucchinis and boil them in water for about 10 minutes. Remove them from the water.
  2. In a bowl, combine minced garlic, Anthotiro cheese, feta cheese, breadcrumbs, mint, parsley, and pepper. Mix the ingredients well.
  3. Cut the zucchinis horizontally and fill them with the cheese mixture.
  4. Place the stuffed zucchinis in a casserole dish. Drizzle olive oil over them.
  5. Cook the stuffed zucchinis in the oven for about 30 minutes.

OMG I love zucchinis!!! I'd totally eat that.
 
You should give it a try someday. and you can use fewer zucchinis make the dish smaller.
I haven't made them in a few years. There was a time when I used to cook a lot of them.
You're right, I definitely should. And I should have had that recipe back when I had a garden; two zucchini plants would have furnished the whole town! :LOL:
Those things REALLY produce!
