Peanut Butter Cookies

- 125g butter (at room temperature)
- 175g crunchy peanut butter
- 200g brown sugar
- 260g all-purpose flour
- 1/2 tsp baking powder
- 110g unsalted peanuts, chopped
- 1 egg
- Preheat the oven to 180°C and line a baking tray with non-stick baking paper.
- In a mixing bowl, beat the butter and peanut butter until creamy.
- Add brown sugar and beat until pale.
- Incorporate the egg and beat until well combined.
- Sift the flour and baking powder together, then use a wooden spoon to mix them along with the chopped peanuts into the peanut butter mixture.
- Lightly flour your hands and roll tablespoonfuls of the mixture into balls, placing them about 4cm apart on the baking tray.
- Flatten each ball to about 5cm in diameter and 1cm thick.
- Bake in the preheated oven for approximately 15 minutes or until golden brown.
- Allow the cookies to stand on the baking tray for about 5 minutes, then transfer them to a wire rack to cool.
- Repeat with the remaining mixture.
- Store the cookies in an airtight container for up to one week.
