Peanut Butter Cookies

Ingredients:

  • 125g butter (at room temperature)
  • 175g crunchy peanut butter
  • 200g brown sugar
  • 260g all-purpose flour
  • 1/2 tsp baking powder
  • 110g unsalted peanuts, chopped
  • 1 egg
Instructions:
  1. Preheat the oven to 180°C and line a baking tray with non-stick baking paper.
  2. In a mixing bowl, beat the butter and peanut butter until creamy.
  3. Add brown sugar and beat until pale.
  4. Incorporate the egg and beat until well combined.
  5. Sift the flour and baking powder together, then use a wooden spoon to mix them along with the chopped peanuts into the peanut butter mixture.
  6. Lightly flour your hands and roll tablespoonfuls of the mixture into balls, placing them about 4cm apart on the baking tray.
  7. Flatten each ball to about 5cm in diameter and 1cm thick.
  8. Bake in the preheated oven for approximately 15 minutes or until golden brown.
  9. Allow the cookies to stand on the baking tray for about 5 minutes, then transfer them to a wire rack to cool.
  10. Repeat with the remaining mixture.
  11. Store the cookies in an airtight container for up to one week.

I haven't had those in a long time. Someone I used to know would make those for me over the holidays.
