You'll know. Mostly begins with acting weird, not being communicative and suddenly won't care too much if you can or can't see him/her.
What @Laifot said. They quit acting like their usual self and become more distant. Sometimes they become agitated and rude towards you. Sometimes they may not come home at all. Some men and women can't keep up the act forever. They eventually get caught and called out on their bullshit. My ex wife cheated on me for years. Some of those men that she was seeing I have no knowledge of.

If they very conscious of their smartphone, they are definitely hiding something. They are cheating. I have had several experiences with cheating partners to know better.
Whenever you notice that your partner have started lying over simple things that he or she shouldn't be lying about then it is very obvious that something is going on behind your back with another person he or she's dating.
