Good Morning GIF

A lot of coding jobs will have requirements they list, but they'll work with you if you come close to what they're looking for and you learn a lot more once you actually start working with them, so there's a level of expectancy that you will learn and grow as you progress with the job. If you're worried about building a resume that'll wow them, then start by building a portfolio on some of the freelance sites out there like UpWork or FlexJobs. You'll gain confidence in your abilities, get paid and build a portfolio you can use on your resume :)
That's relieving to hear, that they'd be willing to accept someone with at least some of the minimal skills.

I already have a portfolio site, but it isn't much.

I've tried freelancing like Freelancer.com but I could never really grow accustomed to their setup and I'm always afraid I won't finish the project on time or meet the client's expectations.

Yeah, you'll find a lot of employers willing to work with you if you show you're willing to put the effort in and get them where they want to be.

Anything is a start :)

Totally understandable, but it's great practice, wonderful experience and a potential income, so worth keeping in mind as much as possible. Could also contribute to open source projects or Google Summer of Code projects, as well, that'll give you a team to work with and you'll be credited for your work, so it's a resume builder.
