I like them over-easy with cheese, placed on a piece of toast with bacon. Also like to make different types of omelettes.
 
How's this sound?

A non-stick skillet is good, a well seasoned cast iron griddle is better.

Finely dice a handful of onion or use some pico de gallo... and lightly brown it in butter over medium heat. Spread it out into an even layer. Turn the heat down a notch.

Then break two or three whole eggs over the eggs and fry as you normally would. I like mine 'easy over', my wife wants hers scrambled and cooked 'well done'.

Serve with and or all of the following:

Corned beef hash, cooked with onions and extra onions!

Blueberry pancakes.

Sausage.

Toast.

You guys are making me hungry and it's waaaaay too late for that. :lol: I love eggs in every form (mmmm egg drop soup sounds good right about now) but my favorites are scrambled and hard boiled.

My favorite is scrambled. Though also like fried and hard boiled.
 
How do you like your eggs?
Scrambled with black pepper and hot sauce. On average, 13g of protein, with decent amounts of Vitamin A (19%), Vitamin B2 (46%), Vitamin B5 (28%), Vitamin B12 (48%), Vitamin D (15%) and Phosphorous (25%).

There is cholesterol in eggs but as with most foods, the trick is to eat in moderation as part of a healthy balanced diet.

I've never had a 'breakfast burrito' in a corn tortilla; always a flour tortilla. I'll have to try that!
