Eggs

Both are good. Corn tortillas go good with everything!
"Up here" :LOL: the 'prevailing' way to make enchiladas is with flour tortillas. Probably because those are easier to work with, and maybe because they most commonly come in various sizes. However, having grown up in Texas, in my mind there's only one way to make an enchilada.....corn tortillas.
So, when you say "cooked" corn tortilla, exactly what do you mean? Just warmed up a bit to soften in the skillet or warmed up in oil like you do with enchiladas?



(We're subtly drifting off-topic here, eh? :p I think this is supposed to be about eggs)

As a vegan, I don't eat eggs. But I don't like eggs anyway, they are disgusting.

If you have a gas oven then put the tortilla directly on the burner and cook it for like 30 seconds on each side (or to your liking). I have an electric oven so I just put the tortillas in a non-stick flat pan or skillet and warm them up that way.

I like enchiladas better with corn tortillas too! Everyone makes them differently it seems. If someone is going to make them and I talk to them beforehand, I'll suggest corn tortillas.

Scrambled only for me. With cheese or not, it doesn't matter.

Do you like hard boiled eggs?
 
Fat egg sandwich:
Split croisant, smear a little cream cheese on one side.
Add slice of Havarti cheese, scrambled eggs w/sauteed, chopped leeks & jalapeño. Top with crispy bacon.

That looks delicious! Never been a fan of leek, but that'd be worth a try!

Actually, I think onions will work just as well. In fact, things that you have on hand will work just fine. (different cheeses, breads) I just happen to be in love with sautéing leeks right now & keep them on hand. :D

I have to admit, I've never tried them with eggs before, so I might give it a go as-is, but yeah, onions, shallots, peppers, eggs go great with just about everything :D
