"Up here"the 'prevailing' way to make enchiladas is with flour tortillas. Probably because those are easier to work with, and maybe because they most commonly come in various sizes. However, having grown up in Texas, in my mind there's only one way to make an enchilada.....corn tortillas.
So, when you say "cooked" corn tortilla, exactly what do you mean? Just warmed up a bit to soften in the skillet or warmed up in oil like you do with enchiladas?
(We're subtly drifting off-topic here, eh?I think this is supposed to be about eggs)
Scrambled only for me. With cheese or not, it doesn't matter.

Actually, I think onions will work just as well. In fact, things that you have on hand will work just fine. (different cheeses, breads) I just happen to be in love with sautéing leeks right now & keep them on hand.That looks delicious! Never been a fan of leek, but that'd be worth a try!
