Stuffed Zucchinis

- 12 zucchinis
- 1 garlic clove
- 2 teaspoons of breadcrumbs
- 250g Ricotta cheese (substitute for Anthotiro, as it may be challenging to find)
- 250g feta cheese
- 2 teaspoons parsley
- 2 teaspoons mint
- 1/2 cup olive oil
- Pepper to taste
- Wash the zucchinis and boil them in water for about 10 minutes. Remove them from the water.
- In a bowl, combine minced garlic, Anthotiro cheese, feta cheese, breadcrumbs, mint, parsley, and pepper. Mix the ingredients well.
- Cut the zucchinis horizontally and fill them with the cheese mixture.
- Place the stuffed zucchinis in a casserole dish. Drizzle olive oil over them.
- Cook the stuffed zucchinis in the oven for about 30 minutes.
