I believe it is due to bugs being one of the best sustainable food sources for humans in the future. The acre per large farm animal is simply not a practical long-term solution for an ever-growing human species,
but the acre for the same nutrients of bugs is massively more sustainable. There are many ways to look at it, but things like factory farms and climate change from farm animals are things that concern the left much more than the right at this point in time so it has turned into a huge political topic.
