Medium rare. I need plenty of pink in the meat still for all the extra juices, but I don't like having to fight with it too much either, like I do with rare steak.

I eat my steak plain, actually. If I do top it off with something, it's usually bleu cheese, or something like that.

Went to a Logan's Roadhouse (don't know if anyone else has heard of it), and there's a steak they serve, I believe it's the Portobello, which tastes utterly amazing even without anything on top. It's about thirty dollars, but totally worth it.
