Last meal cooked

I made Cabbage Risotto last night and have one more plate left for tonight.
Didn’t take any pics.....I was feeling lazy. I do have one somewhere, though I think :p

The last thing I cooked was dinner last night and it was steamed veggies (onions, cauliflower & peppers) with ground beef and cheese on top.
 
Salmon patties w/steamed okra
Sliced tomatoes and cucumbers
 
The last thing I cooked was meatballs in tomato sauce, but I made them for tomorrow. I’ll probably serve them with rice or something else, as they go well with so many sides.
Since I got the mince today, I made a big batch and freeze the extra meatballs.
I’ve made enough for more than one meal , what’s on this plate is just a fraction of it! :rolleyes:

Okay, this is the last I cooked. It might not be the best looking, but it tastes great! :LOL: I hadn’t planned to make this, so I didn’t have all the right ingredients and was short on some, which led me to add a few other veggies.
Usually, I wouldn’t include them, so it turned out a bit different, but it’s still delicious. :dance:I’m not sure I can even call it by its original name.
Anyway, it’s a rustic dish and one of my favourites. A spicy dish made with country sausage, peppers, and eggplant in a tomato sauce.

You're right there is zucchini.
The original dish doesn’t have zucchini. Different regions make their own versions, some only use eggplant, others different peppers, but sausage is always included. In my version, I used both, but I only had banana peppers, which were very mild and barely noticeable. Since I didn’t have many, I added zucchini to fill it out. :LOL:

I didn’t use much sausage either, and yes, there are onions and herbs in there. I also added chilli flakes because I didn’t have any hot peppers.

I’m not sure how to translate the name into English, but it's basically a spicy dish with country sausage & peppers, or eggplant.
Normally, the pieces are cut bigger. The taste is still great, so it doesn’t really matter
 
I made chicken schnitzel again! So, that's the last thing I cooked.
Here are a couple of quick pictures I took. I snapped one while cooking, but it turned out really blurry, so I’ll just share these two. :p

Last night I made breakfast for dinner.

Scrambled eggs, sausage, bacon... and tortillas to make them into tacos.

Had shredded cheese, salsa and sour cream to put on the breakfast taco if they so desired.
 
Right now, I am in the middle of making a Meatball Sub Dinner, with sides, for 65 people.

It includes macaroni and cheese from scratch, meaning: shredded real cheese, half and half (heavy cream is outrageously expensive right now), real butter, and real cottage cheese, in the noodles.

And, right now, I am on break.

The sauce for the meatballs simmered for about four hours with too much garlic and some diced celery, onions, mushrooms and green peppers in it.
 
Salisbury steak with baked russet potato & green salad.
 
Meatloaf, instant mashed potatoes, "power greens" (mix of spinach, chard, baby kale), cherry tomatoes.
